Strawberry Cake


Good day everyone ! I hope you have a wonderful day ! It is starting to feel like winter already !
I made this strawberry cake for my husband birthday a couple of weeks ago. I combined a couple of recipes and made my own. And my husband love it !  I love it too. It was really very moist and the texture really different than regular cake.


Ingredients

1 regular size white cake mix
3 ounces strawberry flavored Jell-O
10 ounces frozen strawberries I didn't thaw it ( puree with 1/3 milk in the blender ) set aside 1/4 cups for the frosting
1/2 cup butter softened
4 eggs room temperature
1/3 cup sugar or 1/2 cup depends on how sweet you want it
1/3 milk

* Frosting
8 ounces cream cheese
1/4 cup butter softened
1/4 confectioners sugar
1/2 tsp. vanilla
1/4 cup strawberries puree
1 pounds fresh strawberries for garnish optional

Directions

Preheat oven to 350 F. Spray or grease 2 (9-inch) round cake pans
In a large bowl, combine cake mix and gelatin. Add pureed strawberries, eggs, butter and milk; beat at medium speed with an electric mixer until smooth.
Pour into prepared pans, and bake for 30 minutes, or until a wooden pick inserted in the center comes out clean.
Let cool in pans for 10 minutes. Remove from pans, and cool completely on wire racks.
 

Frosting :

In a large bowl, beat butter and cream cheese at medium speed with an electric mixer until creamy. Beat in 1/4 cup of the strawberry puree and vanilla. Gradually add confectioners' sugar, beating until smooth.
Spread frosting in between layers and on top and sides of cake. Garnish with sliced fresh strawberries, if desired.
